Here is a recipe for scones I made- they taste just like the scones from tea house that we love! I took a recipe from Giada (our favorites foods networks stars) & tweaked it, and I am so proud of myself for getting it right. But, I have to warn you, the whipped butter recipe is a Mom recipe, because I just made it up as I went... :)
Valentine Scones
Pulse in food processor:
2 c flour
1/2 c sugar
2 tsp baking powder
1/4 tsp salt
Add 6 Tablespoons COLD unsalted butter to food processor, pulse until you get a crumbly dough that sticks together but is still powdery. You'll know it's right when you have to hit the sides of the processor to get the dough to move. Transfer dough to large mixing bowl.
Stir 1 cup heavy whipping cream slowly into the batter. For chocolate chip scones, add 1/2 to 1 cup chocolate chips at this time, folding into batter. For raspberry thumbprint scones, don't add the chips. :)
Dump dough out onto a floured surface, lightly flour the top of the dough ball, and roll out to a generous 1/2" thickness (not too thin, or scones will be too crispy on edges- hence, the "generous 1/2" thickness"). Cut with heart-shaped cookie cutters (Albertson's had a pack with 4 different sizes that were perfect). Cutters about 4 to 5 inches wide will give you great sizes of scones. For raspberry thumbprint scones, flour the back of a round teaspoon measure and press into the center of the scone. Make the "thumbprint" about half-dollar diam. Fill with seedless raspberry jam/jelly.
Bake at 375 for 15-20 minutes, or just until the very edges are starting to brown. Do not wait until the edges brown all the way around, because they continue to cook for a couple minutes out of the oven. Mine took between 15 and 17 minutes to cook.
Serve with whipped sweet cream butter:
Put 1 stick unsalted butter (room temperature) in a large mixing bowl. Sprinkle with about 1/4 cup sugar & 1/4 tsp salt. Beat with mixers on medium speed, and slowly beat in about 3/4 cup heavy whipping cream and whip until butter is a nice fluffy consistency, about 2 minutes. Slather on scones & ENJOY with tea or your favorite hot drink!!!
